Suka Pinakurat is a variety of vinegar which is actually a fermented coconut sap originating from Iligan City Philippines. Fondly called as a derivation of "sukang tuba", the vinegar is not really sour but more of spicy and chilli.
Suka Pinakurat is commonly used as a condiment and flavoring agent for various dishes in Filipino cuisine. It is often paired with grilled meats and seafood, as well as with traditional dishes like adobo and sinigang. Some people also use it as a dipping sauce for fried snacks like lumpia and empanadas.
